This month we are preparing something truly unique.
It's a 90 day process that starts with a Wagyu Strip Loin - the best of the best.
The Strip Loin is then dipped in tallow fat to form a protective layer for the aging process. Each dip builds up a thin layer of tallow fat until a thick fat ring encases the Strip Loin for its 90 day aging cycle.
We are starting the process now and expect them to be ready by September.
